Stuffed Pepper Soup
This soup has the same flavors as stuffed peppers but is easier to make in one pot.
Ingredients
- 1 lb ground Beef
- 1 small Onion, chopped
- 2 Bell Peppers, chopped
- 2 cloves Garlic, minced
- 1 can (14–15 oz) Tomatoes, diced
- 4 cups beef broth
- 1 cup cooked Rice
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
Instructions
- In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion, bell peppers, and garlic. Cook for about 4–5 minutes until softened.
- Stir in diced tomatoes, beef broth, salt, pepper, and Italian seasoning.
- Bring to a boil, then reduce heat and simmer for 15–20 minutes.
- Stir in the cooked rice and cook for another 5 minutes.
- Taste and adjust seasoning if needed.
Optional toppings
- Shredded cheese
- Fresh parsley
- A spoon of sour cream
Serve hot with crusty bread for a hearty meal.
