Loaded Mashed Potato Casserole

A creamy, cheesy dish that’s like mashed potatoes turned into a comforting casserole.

Ingredients

  • 4 cups Mashed Potatoes (homemade or instant)
  • 1 cup Cheddar Cheese, shredded
  • ½ cup Sour Cream
  • ¼ cup Milk
  • 4 slices Bacon, cooked and crumbled
  • 2 green onions, sliced
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix mashed potatoes, sour cream, milk, half of the shredded cheese, salt, and pepper.
  3. Spread the mixture evenly in a greased 9×13-inch baking dish.
  4. Sprinkle crumbled bacon, remaining cheese, and green onions on top.
  5. Bake for 20–25 minutes until cheese is melted and casserole is heated through.
  6. Serve hot as a side or comfort main dish.

Optional additions

  • Add roasted garlic to mashed potatoes for extra flavor.
  • Use pepper jack cheese for a spicier version.
  • Sprinkle extra green onions or chives before serving for freshness.

This dish is perfect for holidays, family dinners, or anytime you want creamy, cheesy, loaded potato goodness.
