stuffed pepper soup

Stuffed Pepper Soup

This soup has the same flavors as stuffed peppers but is easier to make in one pot.

Ingredients

  • 1 lb ground Beef
  • 1 small Onion, chopped
  • 2 Bell Peppers, chopped
  • 2 cloves Garlic, minced
  • 1 can (14–15 oz) Tomatoes, diced
  • 4 cups beef broth
  • 1 cup cooked Rice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add chopped onion, bell peppers, and garlic. Cook for about 4–5 minutes until softened.
  3. Stir in diced tomatoes, beef broth, salt, pepper, and Italian seasoning.
  4. Bring to a boil, then reduce heat and simmer for 15–20 minutes.
  5. Stir in the cooked rice and cook for another 5 minutes.
  6. Taste and adjust seasoning if needed.

Optional toppings

  • Shredded cheese
  • Fresh parsley
  • A spoon of sour cream

Serve hot with crusty bread for a hearty meal.
